The key to knowing who to trust with your data is predicated on understanding their business model. In other words "How do they make money?"

Meta and all of their properties (with the exception of Occulus) generate profits through advertising. Advertising is sold based on targeting people. Targeting data is generated by analysis of user data. That means you are the product. They mine your attention and your personal information to make money.

Most of Google's profits come from advertising. They've dabbled in phones and tablets.. but at their heart, they are an advertising Goliath. They own both supply and demand side platforms for online advertising and totally dominate search advertising. Like a giant hoover vacuum they suck up content. Some is provided voluntarily: search queries, gmail, google drive (sheets, slides, etc.) photos. Some is provided involuntarily: websites that they scrape, etc. and involuntarily (scraping websites). They mine and analyze all of that data and turn it into targeting segments for advertisers.

Apple makes money primarily by selling phones, computers, watches, Apple TV boxes etc. In other words, Hardware. They make some money off iCloud services and are trying to branch out into streaming content. But they don't need your Personal Information to survive.

So you can come to your own conclusions about who's Terms and Conditions and privacy policies are more likely to be honored by the company you do business with.

We had some of this in my work training last month about how marketing and advertising are in full blown attack mode. They monitor you and know you better than yourself in most cases.
